Ozone (O₃) is a gas composed of 3 oxygen atoms combined in a ring and takes the form of a blue coloured gas, which has a distinct odour and is about one and a half times heavier than air. Ozone molecules wipe out unwanted odours and render the air clean and fresh before reverting back to oxygen.

Ozone kills bacteria by destroying the cell wall of bacteria and viruses. Once the cell wall is destroyed, the harmful pathogens will be unable to survive.

The third oxygen atom of ozone is extremely reactive because it is unstable. This atom readily attaches itself to other odour molecules. When contaminants such as odours, bacteria, or viruses make contact with ozone, their chemical structure is changed to less odorous compounds. As more ozone attacks the remaining compounds, the odour is eventually destroyed. This process is called oxidation. Ozone essentially reverts back to oxygen after it is used. Furthermore, ozone is at least ten times stronger than chlorine as a disinfectant. Chlorine reacts with meat forming highly toxic and carcinogenic compounds called THMs or tri-halomethanes – rendering the meat to a lesser quality product. THMs have also been implicated as carcinogens related to kidney, bladder and colon cancers. Chlorine also results in the production of chloroform, carbon tetrachloride and chloromethane. On the other hand, ozone does not leave any trace of residual product after its oxidative reaction.

Under standard conditions (21°C, 1 bar) the half-life of ozone gas is 20 minutes. The main factor which reduces ozone half-life is higher temperature pressure and velocity.

Several agencies, such as the occupational safety and health agency (OSHA) have proposed MAC-values for ozone. The MAC-value is the Maximum Acceptable Concentration a human is allowed to be exposed to for a certain time and certain agent.
